Open Chicken Lasagne

This single-serve lasagne is a great way to use up your leftover chicken. Increase the recipe if you want to feed more people.

Ingredients

  • 100 grams shredded cooked chicken or turkey
  • 1 tomato, diced
  • 2 handfuls spinach
  • 1 teaspoon dried oregano
  • 50 grams grated mozzarella (or other cheese)
  • 100ml white/cheese sauce
  • 3 lasagne sheets

Method

  1. Preheat your oven to 180°C.
  2. Start by blanching the lasagne sheets in boiling water for 10 minutes until fully cooked, remove from water and leave to cool on a sheet of baking parchment.
  3. In a medium sized bowl mix the chicken, spinach, oregano, half of the mozzarella and the tomato.
  4. Take the cooled lasagne sheets, on top of each sheet place a tablespoon of cheese sauce and spread it to cover the whole sheet.
  5. Line a small tray with baking paper and place one of the lasagne sheets on the tray. Spoon on half of your chicken mix, place the second sheet on top and then add the rest of the chicken mix. Add the last sheet of lasagne and sprinkle the rest of the mozzarella on top.
  6. Place in your pre-heated oven for 20-25 minutes until the top is golden.
