Pacific Fruit Cake

This tropical cake is perfect for afternoon tea.

Ingredients

  • 3/4 cup sugar
  • 3 eggs
  • 2/3 cup vegetable oil
  • 1 teaspoon vanilla essence
  • 3 bananas, mashed
  • 227g can crushed pineapple in juice, well drained
  • 1 teaspoon baking soda
  • 1 cup white flour
  • 1 cup wholemeal flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ cup shredded coconut

Method

  1. Preheat oven to 180°C.
  2. Grease a 23cm round spring form cake tin and link the base with baking paper.
  3. In a large bowl, whisk together sugar, eggs, oil and vanilla.
  4. Add the banana, pineapple and baking soda and mix well.
  5. Add flours, baking powder and cinnamon. Mix until just combined.
  6. Pour the mixture into the cake tin and sprinkle threaded coconut on top.
  7. Bake for 50-55 minutes or until an inserted toothpick comes out clean.
  8. Leave in cake tin for 15 minutes before turning out.
