Savoury Bread Pudding

If you thought bread and butter pudding could only be sweet, think again! This savoury version is a great way to use up odds and ends you have lying around.

Ingredients

  • 4 eggs
  • 2 cups milk
  • 12 slices of stale bread or bread rolls
  • Butter or margarine
  • 1 ½ cups grated cheese
  • 2 cups leftover vegetables, bacon, other meat, tomato, herbs, onions
  • Small amount of extra grated cheese for topping.

Method

  1. Preheat your oven to 180°C.
  2. Grease a casserole or oven dish with butter.
  3. In a bowl whisk the eggs and the milk and add a grind of salt and pepper.
  4. Butter the slices of bread and layer in the casserole dish with the cheese, leftover vegetables and any other optional ingredients you are using.
  5. Pour the egg mixture over the top, and allow to soak in for five minutes. Make sure all the bread has been moistened by the egg mix.
  6. Bake for 40 minutes or until the egg is set. Sprinkle cheese over the top and grill for a few moments. Serve with salad or seasonal vegetables.
