Smoked Fish Cob Loaf

Transform leftovers into a delicious and creamy cob loaf, perfect for sharing! Whether it’s for a casual gathering, game night, or a relaxed weekend platter, this crowd-pleaser never seems to last long.

Ingredients

  • 1 loaf bread, with the center cut out into a bowl

Filling

  • 300g sour cream (this is a good opportunity to use any leftover dips etc)
  • 150g cream cheese
  • 300g shredded smoked fish
  • 2 tbsp chopped fresh herbs- (I like chives and parsley)
  • 1 packet onion soup mix
  • 150g grated cheese (plus another sprinkling for the top)
  • 2 tbsp mustard

To serve

  • Crackers, pickles, vege sticks, anything goes here!

Method

  1. Combine all filling ingredients in a large bowl and mix well, I like to leave it a bit chunky so you get nice textures when you eat it. (if you’re not a fan of smoked fish, chicken and bacon is a great substitute filling!).
  2. Add to the bread bowl on a lined baking tray, top with cheese and bake for 35-45 mins at 160c, until the cheese on top is brown and the fillings nice and hot.
  3. Serve immediately, this is always a hit for me, nobody ever seems to let it go cold!
