Salmon Mashed Potato Bites

Jazz up your leftover mashed potato by making these salmon mashed potato bites – perfect as a starter or finger food for a party.

Ingredients

  • olive oil or cooking oil spray
  • 3 cups mashed potato
  • 1 tablespoon lemon zest
  • 200g Crème Fraiche
  • 100g cold smoked salmon, cut into thin strips
  • 2 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • salt, to taste
  • freshly cracked pepper
  • flour to dust

Method

  1. Preheat oven to 220°C.
  2. Spray mini muffin tins lightly with oil, or apply oil with a paper towel.
  3. Mix together mashed potato, lemon zest, crème fraiche until soft. Add salmon and fresh dill. Combine well until ingredients are evenly distributed amongst the potato. Season with salt and pepper.
  4. Scoop a tablespoon of potato and roll in a light dusting of flour. Roll well in clean hands to create a ball, then place into mini muffin tin mould.
  5. Place in the oven and cook for 12-15 minutes until the tops begin to brown.
  6. Remove from oven and allow to rest for a few minutes before serving hot.
