Baked Bread Pudding

While this is called a pudding, it is actually more like a cake.

Ingredients

  • 500g bread (roughly a loaf), torn into pieces
  • 500g mixed dried fruit
  • 85g mixed peel (optional)
  • 1 ½ tablespoon mixed spice
  • 600ml milk
  • 2 large eggs, beaten
  • 140g brown sugar
  • Zest 1 lemon (optional)
  • 100g butter, melted
  • 2 tablespoons brown sugar

Method

  1. Preheat the oven to 160°C.
  2. Mix together all of the ingredients except for the 2nd amount of brown sugar. Allow to soak for 10 minutes and turn into a greased 30cm cake tin.
  3. Bake for one and a quarter hours.
  4. Remove from the oven, sprinkle over the 2nd amount of brown sugar and then return to the oven for a further 15 minutes.
  5. Remove from the oven and allow to cool before serving.
