Banana Spice Loaf

This is a healthier version of banana bread, great to use up brown bananas.

  • 150g reduced-fat spread, plus extra to grease
  • 3/4 cup sugar
  • 3 eggs, beaten
  • 1 cup self-raising flour
  • 1/2 teaspoon baking powder
  • 1 cup mashed banana
  • 1 teaspoon ground mixed spice


  1. Preheat oven to 180ºC. Lightly grease a loaf tin with spread.
  2. Beat spread and sugar in a bowl until light and fluffy. Gradually add eggs then sifted flour and baking powder. Mix in banana and spice.
  3. Pour into prepared loaf tin and bake for 45 minutes until top is golden brown or until a skewer comes out clean. Store in an airtight container for up to two days or freeze in slices
