Broccoli Bites

With a few simple ingredients, we’re chucking the ‘pimp’ into pantry with this 5-star dish using up every part of the broccoli.

Ingredients

  • 1 head of broccoli and stalk
  • 1/3 cup self-raising flour
  • ¼ cup parmesan, finely grated (or cheddar)
  • 2 spring onions, finely chopped
  • Sprig fresh thyme, finely chopped (or 1 tbsp dried mixed herbs)
  • 1 garlic clove, crushed
  • Pinch of cheeky chilli
  • Salt and freshly ground black pepper
  • 500ml oil for frying

Method

  1. Peel and roughly chop the stalk.  Separate the florets and pop everything into boiling salted water for 2 – 3 minutes or until just cooked.
  2. Remove, drain and allow to cool then roughly chop.
  3. Scrape in a large bowl and add the remaining ingredients.  Mix well until you have a consistency that will stick together and form small balls.
  4. Pour oil into a saucepan and heat.  A good way to know when the oil is ready, dip a wooden handled spoon or spatula into the oil, if it bubbles just around the edges of the handle, you’re good to go.
  5. Fry your broccoli bites in batches.  Careful not to crowd the pan.  Gently toss them around so they crisp up evenly (this should take between 5 – 7 minutes per batch).
  6. Remove and set aside.  Continue until you have a basket of gorgeousness.
