Chickpea cookies

Using only 6-ingredients you can make these tasty cookies using canned chickpeas as the hero!

Ingredients

  • 400g can chickpeas, drained and rinsed
  • ½ cup peanut butter or your favourite nut butter
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • ½ cup chocolate chips or chopped chocolate

Method

  1. Heat oven to 180C bake or 160C fan bake.
  2. Prepare a baking tray by greasing it or lining with a baking mat.
  3. Place chickpeas, peanut butter, sugar, vanilla, and baking powder in a bowl of a food processor.
  4. Pulse the first few times to begin combining the ingredients then blitz until the mixture resembles a thick cookie dough. Scrape down sides if needed.
  5. Add chocolate and pulse a few more times to mix through. Remove the food processor blade.
  6. Roll dough into balls with slightly wet hands or use two spoons to scoop the mixture and place onto the baking tray, flatten using your palm or a fork to about 1cm thick.
  7. Bake for 10-15 minutes or until lightly golden. Remove from oven and leave to cool for a couple minutes before transferring onto a cooling tray or plate.
