Berrymisu Mess

Think of a tiramisu, Eton mess, and parfait fusion - add berries and you’ve made a berrymisu mess!
A great way to use up those soft berries and you can change up the recipe to use what you already have, or your favourite ingredients to fill the layers and make your own misu-mess.

Ingredients

  • 2 cups berries, fresh or frozen or a bit both
  • Sugar, to taste
  • 200ml-300ml cream or coconut yoghurt
  • 1 cup any or a mixture of crushed biscuits, meringue, pretzels, sponge fingers

Method

  1. Place frozen and/or fresh berries in a saucepan or small pot, add a splash of water and place on the stove over medium high heat.
  2. Simmer while stirring occasionally until the fruit is soft and the liquid has thickened slightly. Test taste and add sugar if desired. Set aside to cool slightly.
  3. Prepare a bowl or cups.
  4. Whip cream until it reaches soft peaks (if using). If desired, you can also fold through a couple of tablespoons of the cooked berries with the whipped cream or yoghurt.
  5. To assemble, layer the bowl or cup starting with crushed biscuits, cooked fruit, cream or yoghurt and continue until you have used up all your ingredients.
  6. Serve or place in the fridge for a couple of hours to cool.
