Braised Baby Lettuce

If you aren't sold on the idea of salad, you can cook your lettuce. This speedy cooking method keeps the lettuce quite crisp and it is a good side dish with a Chinese-style meal.

  • 4 Little Gem lettuces (or cos lettuce)
  • Juice and rind of 1 orange
  • 3 tbsp soy sauce
  • 25g raisins
  • 2.5cm root ginger


  1. Trim the base of the lettuces and cut them in half, lengthways.
  2. Peel and grate the ginger.
  3. Put all the ingredients except the lettuces into a wok or large fry pan and bring to the boil.
  4. Add the lettuce halves and cook for 3 minutes, turning frequently, until heated through but still quite crisp. Serve immediately.
