Breadcrumb gnocchi

Get creative with your dry bread and turn it into a delicious gnocchi.

Ingredients

  • Breadcrumbs (1 cup or 200g)
  • Flour (1 3/4 cups or 200g)
  • Milk (1 1/4 cups or 300g)
  • Extra-virgin olive oil (1 tablespoon)
  • Salt to taste

Method

  1. Make a well with the flour and breadcrumbs add the boiling milk a pinch of salt, and a drizzle of olive oil knead everything together.
  2. Cover with a towel and let it rest for 30 minutes. Roll into ropes about 1 cm in diameter.
  3. Cut the ropes into small pieces.
  4. Cook in simmering water for 7/8 min.
  5. Serve with your favourite sauce.
