Broccoli waldorf salad

Champion broccoli stalks and celery hearts in this delicious waldorf salad.

Ingredients

  • Broccoli stems
  • Celery hearts
  • Grapes
  • Walnuts
  • Blue cheese
  • Apples
  • Lemon/fennel dressing (lemon juice/zest, fennel seeds, honey, Dijon mustard, olive oil)

Method

  1. Toast walnuts and fennel seeds on separate trays in a preheated 160°C fan oven (180°C if no fan) for 5 minutes.
  2. For the dressing, zest the lemon and extract its juice. Bash the toasted fennel seeds in a mortar and pestle, then combine with lemon juice, 1 teaspoon of Dijon mustard, and 1 tablespoon of honey in a bowl.
  3. While whisking, slowly drizzle in 150 ml of olive oil. Alternatively, place all ingredients in a tub and shake well, or use your preferred salad dressing.
  4. Slice vegetables thinly, which takes about 25 minutes. Pop on a podcast to make it enjoyable.
