Cheesy Potato Bombs

These cheesy potato bombs are a quick and tasty way to use up leftover mashed potato and breadcrumbs.

Ingredients

  • 600g leftover mashed potatoes
  • 2 spring onions
  • 150g cheese
  • 3 tablespoons Best Foods Mayo
  • Salt and pepper
  • 2 eggs
  • ½ cup plain flour
  • ½ cup breadcrumbs (made from leftover bread)

 

Method

  1. In a large bowl add the mash potatoes, chopped spring onions, cheese and Best Foods Mayo. Season the mixture well with salt and pepper
  2. Mix the mixture thoroughly using a masher or your hands and eliminate any lumps
  3. Divide and roll the potato mixture into 12 similar size balls (approximately the size of a golf ball) and set aside
  4. Organise your crumbing station as below – you will need 3 shallow bowls and 1 tray
  5. Bowl 1 – Add  ½ cup plain flour seasoned with salt and pepper
  6. Bowl 2 – Add 2 egg beaten
  7. Bowl 3 – Add ½ cup breadcrumbs
  8. Line up each bowl in the order above 1-2-3
  9. Roll the potato bomb in flour, then into the egg mixture and then into the breadcrumbs. Place onto a tray
  10. Repeat this method until each of the balls have been coated evenly
  11. Deep fry for 2-3 minutes turning often using tongs to ensure they are evenly browned
  12. Serve with Best Foods Mayo
