Homemade Roast Beef Sausages

These ‘mock sausages’ are a fun and unique way to use up leftover roast meat and vegetables. It’s always worth freezing leftover mashed potato to use in dishes like this – it saves time and money.

Ingredients

  • 200g leftover roast beef, finely chopped (or other meat)
  • 350g leftover mashed potato
  • 150g leftover cooked vegetables, finely chopped (e.g. carrots, peas, broccoli)
  • 2 tablespoons plain flour
  • 2 tablespoons oil

Method

  1. Mix together the beef, potato, vegetables and flour, season to taste.
  2. Mould into 8 sausage shapes and chill for 15 minutes.
  3. Heat the oil in a large frying pan and fry the sausages for 4-5 minutes, turning once or twice until golden. (This may need to be done in two batches).
