Pacific Fruit Cake

Ingredients
- 3/4 cup sugar
- 3 eggs
- 2/3 cup vegetable oil
- 1 teaspoon vanilla essence
- 3 bananas, mashed
- 227g can crushed pineapple in juice, well drained
- 1 teaspoon baking soda
- 1 cup white flour
- 1 cup wholemeal flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ¼ cup shredded coconut
Method
- Preheat oven to 180°C.
- Grease a 23cm round spring form cake tin and link the base with baking paper.
- In a large bowl, whisk together sugar, eggs, oil and vanilla.
- Add the banana, pineapple and baking soda and mix well.
- Add flours, baking powder and cinnamon. Mix until just combined.
- Pour the mixture into the cake tin and sprinkle threaded coconut on top.
- Bake for 50-55 minutes or until an inserted toothpick comes out clean.
- Leave in cake tin for 15 minutes before turning out.
