  • 1 cup plain flour
  • 1 tablespoon sugar (optional)
  • 2 teaspoons baking powder
  • Pinch salt
  • 1 cup water
  • 3 tablespoons oil or melted butter + extra for cooking
  • 1 teaspoon vanilla

  1. Sift dry ingredients into a bowl, mix to combine and make a well in the middle.
  2. Add remaining ingredients into the well and mix until it is just combined. Small lumps in the batter are ok.
  3. Heat a frying pan on the stove over medium heat with a small amount of oil or butter.
  4. Cook spoonfuls of the batter for 2-3 minutes on each side or until golden brown. When you see small bubbles appear on the surface of the wet pancake, that is a good sign it is ready to be flipped.
  5. Serve with your favourite toppings.
