This pumpkin and kumara recipe makes a great side dish to any meat.

  • 1kg kumara, grated
  • 1 kg pumpkin, grated
  • 6 large silverbeet leaves, finely chopped
  • 1/2 cup cashew nuts, roasted and finely chopped
  • 1/2 cup coconut cream
  • 1/2 cup milk
  • Pepper to taste


  1. Preheat the oven to 180°C.
  2. Combine all the ingredients and mix thoroughly.
  3. Line a baking dish with tinfoil, allowing enough to fold over the top.
  4. Place the mixture into the baking dish. Fold over the ends of the tinfoil to make a parcel.
  5. Bake for one hour.
