The beauty of this summer vegetable slice is that it can be eaten for breakfast, lunch or dinner!

Ingredients

  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 200g bacon or ham, chopped (optional)
  • 3 courgettes, grated
  • 2 carrots, grated
  • 1 cup grated cheese
  • 1 cup self-raising flour
  • ½ cup oil
  • 5 eggs, lightly beaten
  • salt, to taste
  • pepper, to taste

Method

  1. Preheat oven to 180⁰C and grease a medium baking dish.
  2. Heat one tablespoon of oil in a medium fry pan. Add the onion and bacon and cook until the onion is soft.
  3. Tip the onion and bacon into a very large bowl. Add the courgettes, carrot, cheese and flour and mix to combine.
  4. Pour in the oil and eggs, season with salt and pepper and mix well.
  5. Tip the mixture into the baking dish and place in the pre-heated oven.
  6. Cook for 30 – 40 minutes until the top is golden and the slice is cooked.
