Seared Fish Frames

Make the most of the remaining fish flesh left on the bone after filleting.

Ingredients

  • 2 fish frames
  • salt and pepper, to taste or your favourite spice or sauce mix
  • oil, for frying

 

Method

  1. Heat oil in a frying pan on the stove over medium high heat.
  2. Sear each side for 2-4 minutes or until golden and cooked through.
  3. Leave to rest on a plate for about a minute.
  4. To serve, slide the meat off the bone and add to a  salad, into a frittata, or turn into fish cakes with mashed potatoes. Or simply drizzle with a herb vinaigrette and serve with salad and grains on the side.
