Banana ANZAC Biscuits

A simple recipe for ANZAC biscuits with a twist.

  • 1 ripe banana, mashed
  • 1 cup oats
  • 2 Tablespoons desiccated coconut
  • 2 Tablespoons honey or golden syrup
  • 1 Tablespoon butter or coconut oil, melted
  • pinch of salt


  1. Mix all of the ingredients together in a bowl, let it sit for 5-10 minutes to let the oats absorb the liquid.
  2. Heat oven to 170C bake or 150C fan bake.
  3. Prepare a baking tray, grease tray or line with baking paper or baking mat.
  4. Roll tablespoonfuls of biscuit mixture into balls, place on the tray and flatten.
  5. Bake for 15 minutes, or until golden brown.
  6. Leave to cool slightly on the tray before transferring.
