Turkey and Cranberry Strudel

Making a strudel out of filo pastry is a simple way to make a pie. This chicken and cranberry strudel can be made using your leftover Christmas turkey.

Ingredients

  • 5 sheets filo pastry
  • 2 cups cooked chicken or turkey, shredded
  • 2 cups cooked vegetables, diced
  • ½ cup sour cream
  • 2 tablespoons cranberry sauce or jelly
  • 50g melted butter or olive oil
  • Sprinkle sesame seeds (optional)

Method

  1. Preheat oven to 180°C.
  2. Mix the meat, vegetables, sour cream and cranberry sauce in a bowl.
  3. Lay a sheet of filo on the baking tray. Brush with melted butter or oil. Repeat with the five sheets of filo, making sure you brush each of them.
  4. Place the chicken mixture along one length of the filo about 5 cm from the edge. Brush all four edges with melted butter. Fold the long side of the filo over the filling, then fold in the two short sides. Brush the exposed edges with melted butter then roll it up to form a sausage.
  5. Ensure the seam edge is down on the tray, brush the top with melted butter and sprinkle with sesame seeds.
  6. Bake in the oven for 30 minutes until filo is crisp and golden.
