Fried Watermelon Rinds

We admit that fried watermelon rinds do sound a little crazy, but in the Southern States of America they're considered a treat. While these certainly aren't healthy, they are a unique way to reduce food waste.

Ingredients

  • Watermelon rinds
  • 1 egg, beaten
  • 1 tablespoon orange juice
  • 1/4 cup flour
  • Oil for deep frying
  • Icing sugar or cinnamon sugar for serving

Method

  1. Slice watermelon rinds into sticks about 1.5cm thick.
  2. Let rinds sit overnight uncovered in the fridge to air dry.
  3. Mix the beaten egg and the orange juice to make an egg wash.
  4. Dip each rind into the egg wash and then into the flour. Repeat so each rind has been double dipped.
  5. Heat oil to 180°c in a deep fryer, wok or large pot.
  6. Fry the watermelon rinds in batches for two to three minutes each side, or until they are golden.
  7. Cool slightly before serving. Serve dusted with icing sugar or dipped in cinnamon sugar or maple syrup.
