Chocolate Courgette Cake

If you're running out of ideas for how to cook courgettes, try this chocolate courgette cake. Don't despair if your courgettes have grown into marrows, you can use them in this cake too!

Ingredients

  • 2 1/2 cups flour
  • 5 teaspoons baking powder
  • 1/2 cup cocoa powder
  • 2 teaspoons nutmeg
  • 500gm grated courgette/marrow
  • 3/4 cup olive oil
  • 1 1/2 cups white sugar
  • 3 eggs
  • 2 teaspoons of vanilla essence

Method

  1. Preheat oven to 180ºC.
  2. In a bowl, sift flour, baking powder, cocoa and nutmeg. Mix well.
  3. In a separate bowl mix the grated marrow, oil, sugar, eggs and vanilla.
  4. Make a well in the dry ingredients and add the wet ingredients, mix well until all dry ingredients have been folded in.
  5. Line a spring based caked tin with baking paper. The mix will be sloppy, but pour into the cake tin and bake for approx 40 mins. Test with skewer to ensure it cooked through, remove from oven and allow to cool for a further 10 minutes.
