Veggie Fritters

These crispy veggie fritters are a quick way to transform leftover vegetables.

  • Approximately 2 cups of leftover vegetables
  • 2 raw potatoes, grated
  • 1 onion, finely chopped
  • 3 eggs, separated
  • 2 tablespoons olive oil
  • ½ cup self-raising flour
  • Salt and pepper


  1. Cut the leftover vegetables into small cubes.
  2. Mix the vegetables with the potatoes and onions.
  3. Place vegetables and egg yolks into a bowl and stir to combine.
  4. Place egg whites into a bowl and beat until foamy. Fold into the vegetable mixture.
  5. Form into patties suitable for your requirements.
  6. Heat oil in a large pan and cook until golden brown.
