Chocolate Mayonnaise Cake

A fun and quick to make recipe featuring mayonnaise as the egg and oil substitution for a delicious chocolate cake!

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • ½ cup cocoa powder
  • 1 cup water or cooled black coffee
  • 1 cup mayonnaise
  • 1 teaspoon vanilla extract


  1. Heat oven to 175C or 155C fan bake. Prepare an 8” cake tin or baking dish by greasing it or lining with baking paper.
  2. Sift the dry ingredients in a bowl, mix using a whisk then make a well in the centre.
  3. Add remaining ingredient and mix until just combined.
  4. Pour into the prepared tin and bake for 50-55 minutes or until a skewer inserted in the middle comes out clean.
  5. Remove from oven and leave to cool for 5 minutes before removing from the tin. Cool completely if icing.
