Omelette Wrap for Leftovers

This omelette wrap is perfect for turning a small amount of leftovers into a whole new meal.

Ingredients

  • 1 teaspoon olive oil
  • 2 eggs
  • ¾ cup leftovers
  • 1/3 cup leftover rice, cold (optional)
  • 1 teaspoon soy sauce
  • 1 spring onion, chopped

Method

  1. Heat the oil in the pan on medium heat
  2. Lightly beat the eggs in a bowl and mix in the rice (if using), soy sauce and spring onions.
  3. Pour the egg mixture into the pan and tilt the pan until the egg mixture covers the whole base.
  4. Allow the egg to set and then flip it to cook the other side.
  5. Tip the egg wrap onto your plate
  6. Add the stirfry in the middle of the egg, then roll up both sides and serve.
