Ingredients

  • 400g tin jack fruit (in water not brine)
  • Slider buns

BBQ Seasoning

  • 2 tbsp brown sugar
  • 1 tbsp paprika (smoked is also good)
  • 1 tbsp garlic powder
  • 1 tsp onion flakes
  • ½ tsp salt
  • 1 tsp black pepper
  • Sprinkle of chilli flakes (optional)
  • Oil for frying
  • 1 onion, chopped

BBQ Sauce

  • ½ cup coconut milk
  • ¾ cup tomato sauce
  • drizzle sesame oil
  • 1 tbsp BBQ Seasoning Mix
  • dash of Worcestershire sauce

Slaw Dressing

  • ½ cup coconut milk
  • 1 tsp hot mustard
  • ½ cup coconut milk
  • 1 tsp BBQ seasoning
  • Zest and juice of one lemon

Method

  1. Drain the jack fruit, drop into a container and chop up.  I find a pair of scissors is much easier than a knife.
  2. Using some kitchen paper, dab and dry any excess water from the jack fruit.
  3. Mix together the seasoning spices and sprinkle 1 tbsp over the jack fruit.  Combine and set aside.
  4. Pour the sauce ingredients into a pan, stir over a gentle heat until thick and bubbling.
  5. In a frying pan, add 2 tbsp oil, chuck in the onions and scrape in the jack fruit.  Fry over a medium heat until the jack fruit is golden and crispy.  Pour over the sauce and remove from the heat until ready to serve.
  6. Check out your fridge drawer for slaw ingredients.  I chopped up ¼ cabbage, 1 spring onion, 1 carrot, ¼ cucumber and some fresh herbs.  Feel free to add chopped, apple, celery, pickles or any veg you want to use up.  Combine with the dressing ingredients.
  7. Serve the BBQ jackfruit in toasted buns with slaw on the side.
