Muffin Case Tarts

These healthy tarts are quick and easy to make, and are a great alternative to a sandwich in your child's lunch box.

  • 6 slices of bread
  • 1 cup vegetables, chopped or grated
  • 3 eggs
  • 2 tablespoons cheese, grated


  1. Heat oven to 200°C and lightly grease a muffin tray.
  2. Press slices of bread into a muffin tray.
  3. Place the vegetables into bread cases.
  4. Beat the eggs and pour over vegetables. Sprinkle cheese over the top.
  5. Bake for approximately 15 minutes or until egg is set.
