Tim Shadbolt’s Cheese Rolls

Invercargill Mayor Tim Shadbolt shares his recipe for cheese rolls. These cheesy treats are also known as the 'Sushi of the South'.

Ingredients

  • 1 tin evaporated milk
  • 1 packet onion soup powder
  • 1 teaspoon dry mustard
  • 250g cheese (grated)
  • 1 teaspoon Worcestershire sauce
  • 1 small onion, finely chopped
  • 1 loaf sandwich bread
  • 50g butter, melted
  • 2 tablespoons chopped parsley

Method

  1. Mix the evaporated milk with the soup powder and mustard in a pot.  Heat it until it is thick, making sure you stir it well.
  2. Add the cheese, Worcestershire sauce and onion. Stir until the cheese has melted.
  3. Spread the cheese mix onto the sandwich bread and roll up.
  4. Brush with melted butter.
  5. Bake at 180ºC for 15 minutes or grill for 4 minutes until golden, then turn over and grill the other side.
  6. Sprinkle with chopped parsley to serve.
