Broccoli Stalk Pesto

If you love pesto, try making this broccoli stalk pesto. It's quick, easy and a great way to make use of a broccoli stalk.

1 jar of pesto

  • ½ cup fresh basil leaves
  • 1 clove garlic
  • ½ cup parmesan cheese, grated
  • ¼ cup cashews
  • ¼ teaspoon salt
  • Ground pepper
  • ½ cup olive oil
  • 1 broccoli stalk, roughly chopped or 1 cup leftover, cooked broccoli florets


  1. Place all the ingredients into a food processor except the broccoli and puree until smooth.
  2. Add the broccoli and use the pulse function to reach the texture you desire.
