Potato, Kumara and Beef Hash

This potato, kumara and beef hash transforms leftover vegetables and meat into a delicious and versatile breakfast or brunch dish.

Ingredients

  • 2 tablespoons olive oil
  • 1 ½ cup leftover cooked potato, cubed
  • 1 ½ cup leftover cooked kumara, cubed
  • 1 ½ red onions, diced
  • 1 teaspoon crushed garlic
  • 4 slices bacon, diced
  • 200g leftover roast or bbq beef
  • 4 eggs, fried
  • ¼ cup parsley leaves

Method

  1. Set or light BBQ to a medium-high heat and place cast iron frypan on it
  2. Heat frypan and add olive oil
  3. Add potatoes and kumara to pan and fry until golden brown and warmed through
  4. Add red onion, garlic and bacon pieces and cook until crispy
  5. Add meat and mix, cook until heated through
  6. Season well with salt and pepper
