Turmeric and Garlic Cauliflower Steaks

Full of flavour, these cauliflower steaks are great as a side or as an entrée served with yoghurt or sour cream and topped with fresh herbs. It’s a great way to eat the whole of a cauliflower - stalks and all.

Ingredients

  • 1 whole cauliflower
  • 2 tablespoons oil
  • 1 teaspoon turmeric
  • 1 clove garlic, finely chopped or ½ teaspoon minced garlic
  • pinch of salt
  • pepper

Method

  1. Heat oven to 200C bake or 180C fan bake and grease or line a baking tray with baking paper.
  2. Cut into 4-6 slices about 1-1.5cm thick. Note: if the ends of the florets of the cauliflower crumble into small pieces as you chop them up, then save them in the freezer to make cauliflower rice, or add to stir fries or soups.
  3. Arrange the cauliflower steaks on the baking tray in a single layer.
  4. In a small bowl combine the rest of the ingredients, drizzle half of the spice paste over the cauliflower and rub to coat the cauliflower. Flip the cauliflower, drizzle and rub the rest of the spice paste.
  5. Bake for 25-30 minutes, turning halfway through.
