Curried Rice Salad

Turn leftover cooked rice into a fresh, nutritious salad.

  • 400g cooked rice, chilled
  • 1 apple
  • 1 red onion
  • 1 capsicum
  • 55g raisins
  • 3 tablespoons finely chopped fresh herbs
  • 60ml oil
  • 75ml white wine vinegar
  • 2 teaspoons curry powder


  1. Peel the onion and chop it finely. Deseed and dice the capsicum. Core and chop or slice the apple.
  2. Whisk the ingredients for the dressing together.
  3. Toss all the ingredients together in a large bowl, then transfer to a serving dish or individual bowls to serve.
