Whole Lemon Loaf

Ingredients
- 1 cup flour
- ½ cup ground almonds or desiccated coconut
- 1 teaspoon baking soda
- Pinch salt
- 1 medium lemon (120g), cut with seeds removed
- 2/3 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- ½ cup yoghurt
Method
- Grease a loaf tin or 8” cake tin. Heat oven to 180C (bake) or 160C (fan bake).
- Combine dry ingredients in a mixing bowl.
- Blend lemon in a food processor with sugar, vanilla, eggs, and yoghurt until the sugar has dissolved.
- Pour wet mixture into dry ingredients and mix until just combined.
- Pour batter into the prepared tin.
- Bake for 30-40 minutes, it until a skewer comes out clean when inserted in the centre of the loaf.
