  • 1 cup flour
  • ½ cup ground almonds or desiccated coconut
  • 1 teaspoon baking soda
  • Pinch salt
  • 1 medium lemon (120g), cut with seeds removed
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • ½ cup yoghurt


  1. Grease a loaf tin or 8” cake tin. Heat oven to 180C (bake) or 160C (fan bake).
  2. Combine dry ingredients in a mixing bowl.
  3. Blend lemon in a food processor with sugar, vanilla, eggs, and yoghurt until the sugar has dissolved.
  4. Pour wet mixture into dry ingredients and mix until just combined.
  5. Pour batter into the prepared tin.
  6. Bake for 30-40 minutes, it until a skewer comes out clean when inserted in the centre of the loaf.
