Whole Orange and Almond Cake

Yes this recipe uses the whole orange, rind and all! Compleat eating at its best!

Ingredients

  • 2 medium oranges
  • 6 eggs
  • 2 ¼ cups or (225g) ground almonds/almond meal
  • 1 cup (or 200g) sugar
  • 1 teaspoon baking powder

Method

  1. Place oranges in a pot, cover with water, and simmer for two hours. Once cooled, cut open to remove seeds, then puree in a food processor, blender or chop very finely.
  2. Grease an 8” cake tin or baking dish and heat oven to 180C (bake) or 160C (fan bake).
  3. Combine all the ingredients in a large bowl, pour into the greased cake tin or baking dish.
  4. Bake for 45 minutes, or until a toothpick inserted into the middle comes out clean.
