Whole Orange and Almond Cake

Yes this recipe uses the whole orange, rind and all! Compleat eating at its best!

  • 2 medium oranges
  • 6 eggs
  • 2 ¼ cups or (225g) ground almonds/almond meal
  • 1 cup (or 200g) sugar
  • 1 teaspoon baking powder


  1. Place oranges in a pot, cover with water, and simmer for two hours. Once cooled, cut open to remove seeds, then puree in a food processor, blender or chop very finely.
  2. Grease an 8”-10” cake tin or baking dish and heat oven to 180C (bake) or 160C (fan bake).
  3. Combine all the ingredients in a large bowl, pour into the greased cake tin or baking dish.
  4. Bake for 45 minutes – 1 hour, or until cooked through.
