Banana and Chocolate Bread-and-Butter Pudding

Bread-and-butter pudding always tastes better than it sounds – and the addition of banana and chocolate makes it even better. This is a simple dessert for kids to make.

Ingredients

  • 8 slices bread spread with butter
  • 1 large ripe banana
  • 1/4c chocolate chips or chopped chocolate
  • 50g sugar
  • 3 eggs
  • 320ml milk or a combination of milk and cream
  • ¾ teaspoon mixed spice

Method

  1. Preheat oven to 180°C and grease an ovenproof dish.
  2. Remove the crusts from the buttered bread (but don’t throw away) and cut the slices into quarters. Arrange half of the bread in the bottom of the dish. Slice the bananas onto the bread and sprinkle over the chocolate chips. Arrange the remaining slices of bread over the top, butter side up.
  3. In a jug combine the sugar, eggs, milk and spice and mix thoroughly.
  4. Chop the bread crusts into little pieces and scatter over the pudding, the pour the liquid over the back of a spoon to gently soak the bread.
  5. Bake for 45 minutes until the top is crisp and brown and the filling is risen and set. Dust with icing sugar and serve hot or cold.
