Pan-fried until crispy, Bubble and Squeak transforms leftover potatoes, excess cabbage, and other vegetables into a comforting, budget-friendly delight perfect for breakfast or dinner.

Ingredients

  • 50g Unsalted butter or vegetable oil
  • 100g Finely Chopped Onion
  • 300g Mashed Potatoes
  • 75g Leftover cooked vegetables
  • 75g Mixed vegetable sauerkraut
  • Chopped Bacon and or Ham (Optional)
  • Salt to Taste
  • Freshly Ground Black Pepper to taste

Method

  1. Gently fry the onion in butter until translucent. Slightly increase the heat and add the mashed potatoes and chopped leftover vegetables.
  2. Add chopped meat if using. Fry for at least 10 minutes, continuously turning to ensure the potatoes and vegetables are thoroughly re-heated. Aim to brown the outside edges without burning by occasionally pressing the mixture into the pan.
  3. Give the vegetables a final press onto the base of the pan with a spatula and cook for 1 minute. Flip and repeat.
  4. Season with salt and pepper to taste.
