Feijoa Fritters

Golden, crispy, and lightly sweet and citrusy, these feijoa fritters are a delicious way to use up a seasonal glut.

Ingredients

  • 6 large feijoas
  • 1 egg, whisked
  • 3/4 cup milk
  • 1 tsp pure vanilla extract
  • 50g butter, melted
  • 1 cup flour
  • 2 tsp baking powder
  • 1/4 cup cornflour
  • oil to cook
  • 1/4 cup caster sugar plus 1 tsp cinnamon to coat

Method

  1. Mix all wet ingredients into the dry ingredients, stir until just combined (The batter should be quite thick).
  2. Heat oil over a medium heat in a deep pan or pot, about 1cm deep. Oil is hot enough when a chopstick or wooden spoon creates bubbles when dipped into the oil. If oil is smoking turn down the heat and wait for it to settle down.
  3. Coat feijoa slices generously in batter, and fry in batches, turning over when one side is golden and crispy.
  4. Sprinkle over cinnamon sugar, and enjoy warm!
