Kūmara flatbread

Got kūmara that needs using up or leftover boiled or mashed kūmara? Try making this flatbread, and you only need two ingredients!

Ingredients

  • 190g (approx. 1 cup) mashed kūmara
  • 105g (approx. 3/4 cup) plain flour

Method

  1. Mix kūmara and flour together in a large bowl and lightly knead until it comes together.
  2. Divide into 4-6 balls, depending on how large you want to make them or your frying pan size.
  3. Heat a frying pan on the stove over medium heat.
  4. Roll out dough on lightly floured surface roll out till it is about 3mm thick or to your preferred thinness/thickness.
  5. Place rolled out dough on the frying pan and cook for 4-5 minutes, turning every 30 seconds to prevent it from burning or getting too stiff. Continue this process with all the remaining dough until they are cooked.
  6. Place cooked flatbread on a plate and cover with a tea towel, this will keep it warm and stop it from drying out and becoming hard.
