Leftover Quesadillas

Quesadillas are a quick and easy way to make leftovers tasty. You can make these in a sandwich press, oven, or a frying pan.

Ingredients

  • 2 tortillas
  • Leftovers (Leftovers that will work well in a quesadilla include mince, stir fry and leftover cooked meat and vegetables)
  • Grated cheese
  • To serve: guacamole, salad, sour cream or sweet chilli sauce (optional)

Method

  1. Heat the sandwich press or fry pan.
  2. Lay one tortilla on the sandwich press or in the frying pan. Spread over leftovers and scatter with grated cheese. Add the second tortilla on top.
  3. Close the sandwich press and cook until the cheese is melted and the tortilla is crispy. Or bake until golden on top and cheese has melted. If using a frying pan you will need to flip the quesadilla in order to cook the other side.
  4. Cool slightly and place on a large cutting board, cut into wedges and serve with your choice of condiments and/or a salad.
