Maple and Smoked Paprika Whole Baked Cauliflower

A spectacular vegetarian main dish that makes the most of your cauliflower.

Ingredients

  • 1 whole cauliflower
  • 2 tablespoons maple syrup
  • 2 teaspoons smoked paprika
  • 1 teaspoon oil
  • Pinch of salt
  • pepper

Method

  1. Heat oven to 200C bake or 180C fan bake and line a roasting tray or baking dish with baking paper.
  2. Cut the bottom end of the cauliflower off so it lies flat. Cut a cross into the stalk; this will allow the heat to rise through the middle.
  3. Microwave on high for 7 minutes or alternatively place the whole cauliflower in a pot of boiling water and  boil for 5 minutes.
  4. Place the cauliflower in the roasting tray or baking dish.
  5. In a small bowl, combine the rest of the ingredients to make a paste.
  6. Drizzle over the cauliflower and rub the spice paste evenly.
  7. Bake for 70 minutes. To check if it is cooked all the way through use a pointy knife and pierce the centre of the cauliflower all the way down the stalk.  If it cuts smoothly, it’s cooked.
