Give leftover lunchbox fruit new life with this creamy Peanut Butter Caramel Smoothie. Blending ripe fruit with peanut butter and maple syrup creates a delicious, waste-free treat that’s perfect for breakfast or an afternoon pick-me-up.

Ingredients

  • Equivalent of 1 banana
  • 1/2 cup of fruit of your choice
  • 1tsp chia seeds
  • 1 cup milk of your choice (I used coconut milk)
  • 1Tbsp maple syrup
  • 1/2 tsp cinnamon
  • 2 Tbsp peanut butter

Method

  1. Add all ingredients into a blender. With the lid on, blend until smooth.
  2. Taste the smoothie and adjust as needed to achieve a thick and creamy consistency. If not drinking immediately, note that the chia seeds will thicken the smoothie as it rests. Add more milk or water to make it drinkable later.
  3. Feel free to add other fruits, seeds, or powders, but I recommend sticking to one main flavour and a maximum of three main ingredients to avoid a muddled taste. Apple and banana mainly add sweetness and thickness without overpowering flavours.
