Pickled Carrots

These picked carrots are super quick to whip up when you need to add some zing to a meal.

  • 2 carrots, thinly sliced or cut into ribbons (you can use a vegetable peeler)
  • ¼ cup rice wine vinegar
  • 2 tablespoons sugar
  • ½ teaspoon salt


  1. Place vinegar, sugar and salt into a bowl and whisk until the sugar has dissolved.
  2. Add the carrots and let them pickle for at least 15 minutes.
  3. Drain the liquid before eating.
