Salami, Cheese, and Onion Strata

This one-dish wonder is the perfect way to use up salami, bits of cheese, milk, soft onions and stale bread before they go to waste!

Ingredients

  • 8 eggs
  • 1½ cups milk
  • Salt and pepper
  • 1 tablespoon oil
  • 6 to 8 slices of bread (or equivalent buns/baguette/rolls)
  • 2 onions, sliced
  • Butter or cooking spray
  • 1 cup grated cheese
  • 1 cup chopped salami
  • Optional garnish: chopped parsley

Method

  1. In a large bowl, crack the eggs, add milk, 1 teaspoon salt, ¼ teaspoon pepper. Whisk until combined. Tear the bread into bite size pieces add to the bowl. Stir gently to combine. Reserve.
  2. Place a frying pan on medium heat. Add oil and onions and season with salt and pepper. Fry for 5 to 10 minutes until golden. Remove from heat and reserve.
  3. Grease the baking dish by spraying with cooking oil spray or rub generously with butter.
  4. Fill the bottom of the baking dish with half of the soaked bread. Follow with a layer of half of the grated cheese. Follow with a layer of all cooked onion. Follow with a layer of all the chopped salami. Follow with a layer of the rest of the bread. Top with the rest of the grated cheese. (NOTE: At this point you can cover and refrigerate overnight. With the prep done ahead of time, tomorrow’s breakfast or brunch is an easy heat and eat. Just bring the dish out of the fridge for 30 minutes to take the chill off before baking.) 
  5. Preheat the oven to 180°C. Bake for 45 minutes until golden and egg is set. If cooking from cold, you may need to add 10 minutes to the cooking time.
  6. Rest for 10 minutes before garnishing with parsley and serving.
