Crispy fried mushrooms with spicy mayo

Ingredients

  • 400 g White Mercer Mushrooms
  • 700 ml Oil for frying
  • 1 ½ cup Plain flour, divided
  • 1 cup Beer
  • 2 ½ tsp Salt
  • ¾ tsp Pepper
  • ½ tsp Garlic powder
  • ¼ tsp Onion powder
  • ½ cup Mayonnaise
  • 3 tsp Sriracha sauce
  • 2 tsp Sambal oelek
  • 1 tsp Lemon juice

Method

  1. Clean the mushrooms with a paper towel or cloth.
  2. Heat 8 cm of oil in a deep pan to 190°C. While the oil is heating, coat the mushrooms in ½ cup of flour, shaking off any excess.
  3. In a medium bowl, mix together the remaining cup of flour, beer, salt, pepper, garlic powder, and onion powder. Dip each mushroom in the batter, allowing the excess batter to drip back into the bowl.
  4. Fry 4-5 mushrooms at a time until golden brown. Repeat the process with the remaining mushrooms.
  5. For the spicy mayo: In a small bowl, mix the mayonnaise, sriracha sauce, sambal oelek, and lemon juice until well combined.
  6. Serve the fried mushrooms with the spicy mayo. Enjoy!
