Double Chicken Mac & Cheese Sandwich

Ingredients

  • 2 slices milk bread
  • 2 fried chicken fillets (leftover)
  • ½–¾ cup leftover mac & cheese
  • 3–4 tbsp jarred pasta sauce
  • 2 slices cheddar cheese
  • Sour cream & chives chips, crushed
  • Fresh chives, chopped
  • Butter (for toasting)

Method

  1. Reheat. Heat the fried chicken until crispy and hot. Warm the mac & cheese until creamy.
  2. Toast bread. Butter the milk bread and toast lightly in a pan.
  3. Build the stack (Bottom bread, Pasta sauce, Chicken fillet, Slice cheddar cheese, Mac & cheese, Chopped chives, Crushed sour cream & chives chips, Second chicken fillet, Second slice cheddar cheese, Top bread)
  4. Finish (important). Place the sandwich back in the pan and toast both sides gently until the cheese melts and everything compresses slightly.
  5. Slice and serve while ridiculously melty.
