Whole orange cupcakes

Make the most brightly flavoured cupcakes by blending up a whole orange!

  • 1 large orange, washed and cut into chunks, pips removed (if any)
  • 4 eggs
  • 1/3 cup oil
  • 3/4 cup sugar (or 1 cup to make it sweeter)
  • 2 cups flour
  • 3 teaspoons baking powder
  • pinch salt


  1. Heat oven to 180C bake or 160C fan bake. Prepare cupcake tin by greasing it.
  2. Place orange, eggs, oil, and sugar in a food processor or blender and blend until smooth.
  3. Sift flour, baking, and salt in a bowl. Mix and make a well in the middle.
  4. Pour wet ingredient in the well and mix until just combined.
  5. Place spoonfuls of the mixture into the cupcake tin, filling about 3/4 of the way up.
  6. Bake for 15 minutes or until lightly golden and a skewer comes out clean when inserted in the middle.
  7. Serve as it is or with your favourite icing.
