Crispy, fluffy, delicious mashed potato pancakes!

Ingredients

  • 3 cups Mashed potatoes
  • 2-4 Spring onions, finely sliced
  • 1/4 cup Grated parmesan cheese
  • 1/2 cup Feta cheese, crumbled
  • 1 Egg
  • 1 tbsp Chopped chives

Method

  1. Combine the mashed potatoes, spring onions, egg, flour, cheese, chives, and salt in a bowl.
  2. The mixture should resemble a thick dough; if needed, add a bit more flour. Taste and season with salt and pepper if required.
  3. Pour the panko crumbs or breadcrumbs onto a plate. Form the mixture into ¼ cup-sized balls, then press them into patties on the plate of crumbs, coating both sides. Heat a thick-based frypan over medium heat.
  4. Cover the bottom with oil and warm to medium-high heat. Fry the hash cakes in batches until each side is crispy and golden brown, avoiding movement during cooking to form a nice crust.
  5. Feel free to use any herbs or cheeses you like and add more veggies. Frozen peas, finely chopped cauliflower, or broccoli can be mixed straight into the dough.
