Crispy Fried Rice Cakes

Leftover rice is easily transformed into dainty, crispy rice cakes which make an ideal side dish.

Ingredients

  • 6 spring onions, finely chopped
  • 1 small capsicum, finely chopped
  • 450g cooked and chilled white long-grain rice (3-4 cups)
  • 1 egg
  • 2 tablespoons plain white flour
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil

Method

  1. Put all the ingredients into a large mixing bowl and use your hands to combine them thoroughly.
  2. Heat the oil in a large frying pan. Place spoonfuls of the rice mixture into the pan, flatten them with the back of a spoon and fry on a medium heat until golden on both sides. Depending on the size of your rice cakes you should be able to make between 8 and 12.
